Southwestern Millet Bowl

What do you feel like for dinner tonight? Mexican for burritos?

Now instead of opening up MENUPAGES on your computer to decide which restaurant to venture out to, decide what it really is that you want. What I love about Mexican food are the tastes of lime, chili and I love a good corn tortilla. Now instead of going out for a massive burrito or nachos, eating too many chips before the meal and ordering a margarita that is loaded with sugar and salt, re-evaluate the situation and try cooking at home.

When I shop for dinner, I decide what type of cuisine or flavor I’m in the mood for. If Mexican is what I’m craving, I know I’m going to use lime, cilantro, cumin and jalapeño to flavor the meal. The first things I pick out are the different vegetables that I want to eat and then I determine the type of protein and starch. Vegetables (should) go in everything! So pick out at least two and try to vary the colors and the textures (at least one should be green). Don’t worry about creating a specific dish, i.e. nachos, a burrito or a taco. The majority of my meals end of being somewhat of a smorgasbord. If you are using good, healthy ingredients, they are going to taste great when you combine them all together. Here are some examples of my favorite homemade “Mexican/ Southwestern” meals:

Southwestern Salad with Honey-Lime Vinaigrette

Vegetables: Romaine, Cilantro, Tomato, Scallion

Protein: Black Beans, Pepper Jack Cheese, and Pepitas

Starch: Ezekiel Sprouted Corn Tortillas

Vegetables: Spiced Kabocha Squash, Broccoli

Protein: Orange-Cumin Black Beans, Pepitas

Starch: Millet

Huevos Rancheros

Vegetables: Arugula, Salsa

Protein: Fried Egg, Black Beans Hummus, Raw Goat’s Milk Cheese

Starch: Ezekiel Sprouted Corn Tortillas

Cooking at home puts you in control. You select the best ingredients and prep them with care. You select the types of fat and salt to use and control how much. You also make the appropriate portion size for you and your family.

Here is a guide to Mexican/ Southwestern Flavors for you to use at home. Remember these are just my suggestions (don’t feel limited to use only the vegetables listed!)

Bean: Pinto, Black

Dairy: Queso Fresco, Monterey Jack, Cheddar, Manchego

Flavor/Herb/Spice: Lime, Cilantro, Chili, Cumin, Coriander

Grain: Corn, Hominy, Millet, Rice

Vegetable: Bell Pepper, Onion, Tomato, Avocado, Scallion

Oil: Olive

Nut/Seed: Pumpkin Seeds

And for those of you who would like a cold one with your meal, have a Negra Modelo or make yourself a margarita. I pour approximately 2 ounces of Patron Sliver over ice, add a splash of (approximately one half to one ounce) Cointreau and the juice from one freshly squeezed lime. Shake and add a splash of sparkling water/ club soda.
